Popping boba is a new sinker/topping that has taken the bubble tea and dessert industry by storm. Using molecular gastronomy agar agar is used to encapsulate liquid juices mimicking edible “paintballs” or “caviar”. These pearls are used similarly to tapioca and sit at the bottom of your drink, when pulled up and lightly bitten they pop and create a new refreshing flavor.
